Apple Cashew Craisin Salad

I don’t know about you but when spring and summer hit I begin craving salads.  Warm weather,fresh ingredients,no oven heat…it’s fantastic!  But I get tired of the same old tossed salad and look for new ways to bring it to life. 

My dear friend,Jessica,introduced this delicious salad to my family last year and we’ve made it numerous times since.  It has a great blend of salty and sweet.  And the best part is you can make it year round!

What you’ll need:

Romaine lettuce,spinach,2 apples,green onions,dried cranberries,cashews,shredded parmesan cheese,sugar,oil,apple cider vinegar,dry mustard,and poppy seeds.  (Annika and Logan call Jeff’s dad “Poppy”and truly believe these are HIS seeds.)

Start with a BIG bowl (this salad feeds a crowd!) and add romaine and spinach to it.

Add parmesan cheese,cashews,and cranberries.  (The recipe calls for one package of cranberries,but since I have a monster-size bag,I used a couple of handfuls.)

Chop apples and green onions and add them. 

Toss all ingredients so they’re well mixed.

Now for the dressing.  Mix sugar and oil together.

Add vinegar.

Add mustard and Poppy’s seeds. :)

Place lid on container and shake very well–until the sugar is dissolved.  It should look like this.

Pour over salad and toss.

Eat on it’s own or add it to your meal.  You can’t go wrong!
