My friends and I have passed this Pumpkin Muffin recipe back and forth so many times,I honestly cannot remember where it originated. The muffins are semi-healthy,super moist,and only require 3 ingredients! What you’ll need:
Yellow Cake Mix,Can of Pumpkin,and 1/2 bag of Cinnamon Chips (sold with the chocolate chips)
Mix cake mix and pumpkin together.
Add cinnamon chips.
Batter should look like this.
Spoon into greased muffin tin (I prefer to make mini muffins,but regular size are fine) They do not rise very much so I usually fill the muffin tins 3/4 full.
Bake at 350° for 15 minutes (for mini muffins)
They come out super moist and the cinnamon chips are melting into the pumpkin. Yum. Can be served hot or cold,but I highly recommend warm with a little butter!

















Where o where do I find these cinnamon chips? I am all set to make these muffins,but cannot find the chips. I’ve been to Wal-Mart and Kroger (our local grocery store). We do have a big HyVee about 30 min away…any thoughts?
We find them regularly at HyVee and Price Chopper. You might have to wait a little longer if they are considered a seasonal product though. Also,the muffins are decent without the cinnamon chips if you’re just craving them!
