What sounds yummy for dinner when it is so chilly outside? Soup! During February,we are going to make some tasty and warming soups to soothe the bitter cold! First up…Taco Soup!
Ingredients: 1 lb. ground beef,2-16 oz. cans chili beans,2-16 oz. cans corn,1-16 oz. can diced tomatoes,1-15 oz. can tomato sauce,1-4 oz. can chopped green chilies,1 pkg. taco seasoning mix,1 pkg. Ranch seasoning mix,1 1/2 cup water,and 1 onion
Do NOT drain anything except the meat! You can either make on the stove or in the crock pot.
In large pot,brown hamburger and onion and drain.
Add chili beans,
corn,
diced tomatoes,
tomato sauce,
green chilies,
taco seasoning mix,
Ranch seasoning mix,
and water.
Stir well.
Cover and simmer for 30 minutes or in a crock pot for several hours.
Serve with grated cheese and tortilla chips and sour cream. This freezes and reheats well and is also delicious make with 2 lbs cooked chicken instead of beef.
